Soba – How it is made
Up in the mountains of Nagano Prefecture, Japan lies a factory that does something few can. A location chosen for the purity of the water both for the cultivation of buckwheat and for the production of their award-winning noodles.
The two ingredients buckwheat and water require some secrets and precision to make what is called Juwari Soba (100% soba), as no additives or other ingredients are used.
In a process that is a patented family secret, the mix becomes stable enough not to come off in the drying process. The noodles then travel on a belt through 3 different rooms with different temperatures, which means that the noodles dry slowly and evenly.
