Shiitake, or oak mussel as they are also known, are dark brown mushrooms with a powerful flavor that are widely used in Japanese cuisine. Fantastically versatile, nutritious and not least tasty, so it's no wonder that it is among the most cultivated mushrooms in the world.

Rinse the mushrooms and then soak in cold water for at least 12 hours.
Store in the fridge.
