Beautiful yellow tea made from 100% Jin Ji cultivar from the mountainous Huoshan region of China. The very tender tea buds are carefully picked and undergo light oxidation before being pan-fired, which stops the process and develops soft roasted notes. While still warm, the buds are wrapped in cloth or paper and allowed to rest in a controlled process (Men Huang) where heat and moisture slowly break down the chlorophyll. This mellows the tea's green nuances and develops its soft yellow character.
