Our birch sugar melts like snow crystals on the tongue, has a healthy sweetness and a low GI (glycemic index). It is extracted from, among other things, birch and is a useful alternative to ordinary sugar in baking. The properties are about the same and therefore you can continue to use your favorite recipes with birch sugar instead. When baking with yeast nutrition, however, you should add a few tablespoons of plain sugar in order for the dough to rise properly.
Sprinkle the birch sugar over coconut yogurt, on grapefruit and as extra sweetness in a smoothie or nut milk. The fact that it counteracts caries hardly diminishes the pleasure.
