100% single estate on the highest quality Yabukita cultivar from Nara prefecture in Japan. Organic stone-ground tea with bright green color and silky taste with umami. By single estate is meant that all raw materials come from one and the same (garden) farm and harvest, i.e. quality and taste is consistently ensured by the same family that has cultivated and produced this premium matcha for many generations. Matcha from Nara is considered to be the original taste of matcha, which compared to nearby areas has more sweetness, more pronounced umami taste, more bright green color and an almost oily touch. This is thanks to the excellent balance between sunlight, fog and humidity from the mountains and rivers of northern Nara. The area is something of a cradle of matcha, among other things as the city of Takayama is located there, where the matcha whisk was born. Also because the very first matcha is said to have been produced here, then called Yamato Cha (green tea from Yamato). Yamato was Nara's former name when it was the capital of Japan about 1400 years ago. Nara has the most sites on the UNESCO World Heritage List in Japan.

Our organic matcha powder comes from Japan and is of the highest quality. The tea variety is called Naramatcha and grows in the shade to develop a more powerful chlorophyll. At the beginning of April, a couple of weeks before harvest, the plants are also covered with a cloth. This causes the substances theanine and catechin to stimulate chlorophyll and amino acids, which gives the intense green color and the fantastic nutritional properties. The finest leaves are selected, picked by hand and steamed before being dried. Stems and leaf veins are cleaned before the leaves are stone-ground into a fine-grained powder. The tea ceremony is an ancient tradition in Japan and thanks to matcha tea's calming and relaxing effect on both body and soul, it is widely drunk by monks before meditation. And because you drink the whole finely divided matcha leaf, not just the tea water, you get more than ten times as much nutrition and antioxidants as from regular green or black tea. Why beat with bamboo and not metal? Well, because hot water causes the catechins (antioxidants) in the matcha to bond with the metal from the whisk. And we want the antioxidants to bind free radicals, not metal - just like with a bamboo whisk!

Användning / Dosering

Dose the matcha powder with a matcha spoon, for normal strength a spoon and for "espresso" a rounded spoon, which is then whisked in hot water (70°) with a bamboo whisk as you pour in more and more water (approx. 2 dl). Always store the matcha powder in the accompanying designer tin can. It has an extra tight-fitting inner lid that protects the matcha powder from oxidizing. Pour the contents of the bag into the jar and close with the plastic lid.
