Marumata Shoten was founded in 1829 and has only conducted traditional business since then (for almost 200 years...) with a focus on premium soy. The full and intense taste of our Tamari Muramata arises from amino acids (nitrogen content) - the higher the nitrogen content, the better the quality and the more intense the taste!
Our "regular" Tamari Strong & Full (9 months storage) has approx. 1.7 nitrogen content, while Tamari Marumata has approx. 2.85 nitrogen content.
